Cumin spiced Tomato Salad


4 Roma tomatoes-cored and diced

1/2 English seedless cucumber-diced

1 small red onion-diced

1/8 cup fresh cilantro

1/4 tsp cumin

3 TBsp lime juice

1 tsp lime zest-minced

Pinch of red pepper flakes

3 punches of sugar

Combine all- adjust sugar and lime  juice to taste

OK, so this looks a super chunky salsa- right??? Well it sort of is . It has the ingredients of a salsa with the addition of sugar. No- it’s not sweet, the lime juice compliments the sugar and it gives it a nice layering of flavors. Use it as a side dish- pair it with grilled chicken or a NY strip steak.

Hungarian style Chicken & Ratatouille


2 chicken breasts-scallopini cut

2 cups eggplant-1/2″ dice-peeled

5 Roma tomatoes-halved

8 baby portabella mushrooms-sliced thin

3 red skin potatoes-thin slice

1 onion- sliced

3 cloves garlic-sliced

2 sprigs fresh rosemary

3 sprigs fresh thyme

4 TBsp Szeged chicken rub

6 slices of Gouda or fresh mozzarella

In a pan with oil , put in onions, garlic, mushrooms, eggplant and the insides of the tomatoes- cook for 6 minutes

Remove from pan and put in oiled dish

Put potatoes and 1 TBsp chicken rub and cook for 8 minutes – flip occasionally

Remove and put onto power of veggie mix

Put chicken in pan with rest of chicken rub and cook for 10 minutes and add onto power of potatoes

Put 1\4 cup water in hot pan and stir and pour over chicken

Nestle tomatoes-hollow side down amongst the chicken

Top with cheese and sprinkle with paprika

Bake for 15 minutes at 375 degrees

First of all, sorry for the lousy picture….it was late and the family was hungry and I didn’t depict all the yummy veggies in there well.

Super sime, just a few steps. You can make ahead and then bake before serving . Easy and flavorful . A nice simple meal for middle of the week

Pan Seared Chicken with Fresh ¬†Cherry and Cider Sauce


Serves 1

1 chicken breast- butterflied

12 cherries-pitted….I’ll tell you a trick later

1/4 cup orange juice

3/4 cup hard black cherry cider

1/4 white balsamic vinegar

1 1/2 TBsp butter

Heat pan and add oil and sear chicken that was salt and peppered

In another pan add cherries, orange juice,cider, vinegar and butter

Bring to a boil then low for 3 minutes….add cornstarch and water to thicken

Serve over chicken

De-freakin-luscious!!!!!   The semi tartness of the cider the sweetness of the white balsamic and those yummy fresh cherries!!!!  I saw some other recipes that called for red wine- too strong and too bitey….the cider is a perfect complement.   Speaking of the cider- a tad sweet but soooo good….it’s like Boylands cherry soda with a kick!Come on folks -make this!!!

Would be nice with grilled chicken but it’s pouring in my neck of the woods.

Gotta go- I need to slurp up the rest of that  sauce!

Oh- the trick…..if you don’t have a cherry pitter…..put the cherry on the opening of the bottle and take a chop stick and push- out pops the pit!!!!!  Super cool.
