Ziggified Shake N Bake Seasoning

1/2 cup pita chips ( crumbled)

2 tsp almond flour

1/2 tsp chili powder

1/2 tsp dried parsley

1 tsp sugar

1 tsp paprika

1/2 tsp garlic powder

1/8 tsp chipotle chili powder

1 tsp salt

1 TBsp parm cheese 

Mix all 

For boneless chicken mix to combine add blend. And bake at 425 for 39 minutes – flip once …. Bone in , cook for 46 minutes … Top with veggies and bake as usual 

MexiCali Chicken Strips 

2 chicken breasts – cut into thin strips

1/2 tsp cumin

1/2 tsp chili powder

1 tsp onion powder

1 tsp oregano

1 tsp coriander

2 Tbsp lime juice

2 TBsp oil

Cilantro for topping

Diced avocado for topping


Mix all and refrigerate for at least 1 hour. Pan fry u til done and pour over chips and top with avocado and cilantro.

Tasty!!!!… Simple and bitey­čśÇ.  I did not add cheese at the end- you can but I wanted the light taste …. No extra carbs on this chef’s ass!!! Coriander is front and center in this dish!

Green Tomato Salsa

3 small NJ green tomatoes- diced

1/3 cup pineapple-diced

1/3 cup shallots- diced

1/3 cup fresh cilantro- chopped

1 jalape├▒o- diced

1 garlic clove-minced

4 TBsp lime juice

4 TBsp oil

2 TBsp honey

Combine all and refrigerate for at least 1-2 hours.

That’s fresh!….NJ fresh…. Shallots soften the oniony bite- it’s more refind!….pinkies up!!  Nice and light and refreshing.

Pour over chicken, fish or dip those chips!

“Jersey Sweats” Chicken Sandwich

Makes 2 sandwiches

1 chicken breast- thin sliced

1/2 tsp paprika

1] tsp red pepper flakes

1/8 tsp smoked paprika

3 tsp Hanks Heat hot sauce(Jersey  made!)

1 tsp organic honey

1 tsp organic, raw apple cider vinegar

1.4 tsp chili powder

2 TBsp Amish Gorgonzola

3 thin strips of avocado

Mix all ingredients except cheese with chicken and marinade for at lest 1 hour.  Pan fry chicken until done and top with cheese. Add fresh avocado on put on grilled bun .

Orange, Cranberry & Almonde Torte

3/4 cups butter

1 1/2 cups sugar

1 1/2 cups almond flour

2 eggs- beaten

1 1/2 Tsp orange extract

1/4 cup slivered almonds

2 tsp orange zest- minced

2 tsp craisins- minced

1 tsp sugar 

Beat butter until creamy and add sugar until fluffy.

Add eggs, extract, zest and beat until blended then add flour until combined.

Line a 9″ pan with parchment and then spray it and sides. Pour in pan and top with almonds and sprinkle the sugar on top

Bake at 350degrees for 35 minutes. 

So easy! I am really not a baker- it’s too specific, but this is easy- mix and pour!   It has a nice chew to it, kind of like a dense brownie! 

Beer Jacked Mac n Cheese

12 oz cooked pasta

6 oz pepper jack cheese( shredded)

6 oz sharp cheddar cheese( shredded)

4 oz gorgonzola( broken up)

2 Serrano peppers- diced

1/2 cup Panko bread crumbs

2 cups milk 

1/4 cup heavy cream

1/2 cup beer

3TBsp butter

3 Tbsp flour

Heat butter and flour- whisk until combines and add milk and cream.. Whisk until bubbly and slightly thicker. Add cheeses and peppers and pour over pasta. Mix all. Put in a 350 degree oven for 30 minutes.

That’s cheesy!… A bit of a bite but not too much – add more peppers or mix in some hot sauce into the cheese!

Baked Chipotle Wings

18 wings -thawed

1/4 cup flour

2 TBsp chipotle seasoning( see my past post)

1 TBsp baking soda

Dredge wings in ingredients and put in a 250 degree oven on the bottom rack for 30 minutes

Then put in a 450 degree oven in the middle rack for 45 minutes

What can I say- Crispylicious!!!   The baking soda draws out moisture thereby making the wings crispy-Science !!

Buff strip Salad with Chipotle Ranch Dressing

1 chicken breast- cut into strips 

1 Serrano pepper- sliced

1 tsp butter

1 TBsp Frank’s hot Sauce

1 1/2 cups romaine salad

2 TBsp ranch dressing

1/2 TBsp or less of Zig’s chipotle seasoning

Put chicken in pan and cook for 3 minutes and add peppers, butter and sauce.

Mix seasoning with dressing and top your greens. Put chicken on top.

Inspired by my daughters university- a fitting pre- game meal!!!..perfect with an ice cold beverage!

Game Day Chipotle & Lime Slaw

3 cups cabbage- shredded

1 plus +TBsp Zig’s chipotle seasoning( see past post for recipe)

1/2 cup mayo

3 tsp lime juice 

2 tsp cilantro- chopped

Mix all and refrigerate for at least 1 hour

Getting ready for gameS day…no typo there… Rooting for my alma matter  and my sons -Penn State and now  U of Colorado at Boulder (my daughter school)…..

Zesty!…top your favorite things, like pulled pork, fish tacos or just eat it out of the bowl!……

Chicken on Bourbon

1 chicken breast- cubed

2 Serrano peppers- sliced

2 TBsp bourbon

2 TBsp brown sugar

1 TBsp white vinegar 

3 TBsp ketchup

1 TBsp soy sauce

1/2 tsp garlic powder

Pinch of red pepper flakes

Mix all ingredients and marinade using 1/2 cup sauce for 1 hour

Pan fry for 4 minutes. Add peppers and pour rest of sauce in and cook for 3 minutes more or until done.

Tasty!!!!….. Sweet with a kick!   You taste the bourbon but it softens with the brown sugar and then goes up a notch with the fresh peppers.
