Green Tomato Salsa

3 small NJ green tomatoes- diced

1/3 cup pineapple-diced

1/3 cup shallots- diced

1/3 cup fresh cilantro- chopped

1 jalapeño- diced

1 garlic clove-minced

4 TBsp lime juice

4 TBsp oil

2 TBsp honey

Combine all and refrigerate for at least 1-2 hours.

That’s fresh!….NJ fresh…. Shallots soften the oniony bite- it’s more refind!….pinkies up!!  Nice and light and refreshing.

Pour over chicken, fish or dip those chips!
