Baby Spinach and Gorgonzola with dried Apricots in a Caper Vinaigrette 

Salad amounts differ to what you like

Baby spinach

Red onion- thin slices

Amish Gorgonzola

White mushrooms- thin slice

Dried apricots- thin sliced


1/2 cup oil

2 TBsp lemon juice

2 TBsp white vinegar

3  TBsp capers

Pinch of fresh ground pepper

Put in mixer and blend well

Briny, sweet, flavorful and bright. You definitely need bread for this salad!
