Tri Colored Peppers with a Tarragon & Dijon Dressing

3 sweet bell peppers- sliced

2 cloves garlic- crushed

3 TBsp sunflower/ coconut oil( or oil of choice)

3 TBsp white vinegar

1 Tbsp Dijon mustard

1/2 tsp dried tarragon

Mix well and combine .

Classic French flavors!… Add sliced onions or tomatoes if you like . For a twist, top with sliced avocado 

Cinnamon Bites( Dog Treats)

Makes 12 cookie treats

1 cup flour

1/2 tsp cinnamon

1/2 cup milk

1/2 tsp honey

1/2 cup shredded carrots

Mix all and out on a greased cookie pan. Bake at 400 degrees for 30 minutes

So those are my dogs-Laila and Leko. Laila is a Great Pyrenees and Leko is an English Springer Spaniel. They love treats so I thought it would be nice to make them something special on this snowy day at the Jersey shore. 

If you have a dog, try this recipe… You’ll get licked for it!

Organic Honey & Balsamic Vinaigrette

1/4 cup balsamic vinegar

1/2 cup extra virgin olive oil

2 tsp Dijon mustard

1 1/2 tsp organic honey

1 1/2 tsp grated yellow onion

1/2 tsp dried oregano

Salt and pepper to taste

Mix and serve

If you like a sweet dressing, this is for you!  My wife loves a good balsamic dressing and my sons girlfriend gave me some organic honey produced from a small hive in Maryland. She was coming over for dinner so I thought it appropriate to come up with something using the honey. The honey was super!- slap it on toast or in hot tea or maybe a funky stir fry (hmmmm… That’s a good idea- I’ll get back to you on that recipe) I shredded the onion- why?  Well my wife hates chunks of onions, so I thought I would disguise it and just give off the flavor without the crunch of raw onion. Try it – I think it’s a keeper

Chipotle & Turkey with Brown Rice Soup

9 oz ground turkey

5 cup veggie broth

10 oz candices tomatoes with chilies

2 cups cooked brown rice

1 cup diced celery

1 cup diced carrots

1/2 cup diced yellow onions 

2 cups blistered corn ( pan fry with dash of paprika until charred)

3/4 tsp dried oregano

1/4 tsp chipotle chili powder

1/2 tsp cumin

1/2 tsp garlic powder

1/4 tsp paprika

Pinch of red pepper flakes

Salt and pepper to taste

Cook turkey and onions until done

Add celery,carrots , tomatoes and spices – cover and cook over medium heat for 30 minutes . 

Top with grated Mexican blend of cheese and dollop of guacamole 

Quick and flavorful- not too spicy, but you can add a few dashes of hot sauce – smoked habenero sauce would be nice …. Hey- where’s my Margharita??? 

Pomme Frites avec Truffle Oil

Serves 1 hungry blogger:)

4 potatoes ( cut in half then in thirds)

1/8 cup + 1/4 cup truffle oil 

1/2 tsp salt

1/2 tsp garlic powder 

1/2 tsp black pepper

1/8 cup parm cheese

1 tsp dry basil

3TBs butter

Heat over. To 450 degrees 

Cut potatoes and out in a bowl with a couple cups of ice cubes- let sit for 1/2 hour then pat dry

Toss with spices then add oil and line baking sheet with foil or parchment paper . Cook for 40 minutes or do until crisp( turn half way ) 

Drizzle butter and parm cheese and serve 

Little work but damn good – truffle oil is the bomb … Buy it!… A little goes along way and the flavor is crazy !!!Earthy and luscious.  Serve with a nice steak or some crusty French bread with major cheese going slmovet the place !
