Mixed Berry Crumble Bars

Crust and crumble topping:

1/2 cup melted unsalted butter

1/2 cup sugar

1/4 cup light brown sugar

1 1/2 cups flour 

Berry layer:

2 cups mixed berries- fresh … Strawberries, blackberries, blueberries- cubed

Heat oven to 350 degrees and spray Pan

Melt butter and  add sugars and flour until crumbly- set aside 3/4 cup

Put in Ian and pat down to form crust

Mix berries with sugar, lemon, cornstarch- top on crust and then add crumble reserve 

Bake for 70 minutes or until brown and done

Refrigerate for 30 minutes then cut into squares 

Simple,super tasty, just really good!…. Use whatever fruit you have on hand- peaches, apricots…. Keep in tubberware for 1 week, fridge it it for 10 days, freezer it it four almost 6 months

Xingyun(Good Luck) Stir Fry with Garlic Sauce

Serves 2

1 chicken breast- cubed

8 shrimp

1 cup carrots- sliced

1 cup celery- sliced

3/4 cup mushrooms- quartered

1/2 cup onion- chunks

2 Tbsp oil


3/4 cup chicken broth

1/4 cup Tamari

1/8 cup soy sauce

1 tsp fish sauce

1 tsp oil

3 Tbsp garlic- minced

2 Tbsp fresh ginger- minced

1 1/2 tsp brown sugar

Cornstarch and water slurry

Add oil to own with veggies. Cook until carmelized and tender.Remove from pan 

Add oil and cook chicken until done and then add shrimp until pink. Put in veggies and 1/3 cup or more of sauce

Smokey Chops with a Sun dried Tomato and Mushroom Cream Sauce

2 boneless pork chops – 1/2 inch thick

6 portabella mushrooms- quartered

8 sundries tomato pieces in oil  – sliced

1/3 cup heavy cream

2 TBsp butter

1 Tbsp oil

Salt and pepper

1/8 tsp Smoked paprika

Heat oil and add tomatoes and mushrooms until tender. Remove

Put salt and pepper and smoked paprika on both sides of chops . Pan sear until done – 4-8 minutes, depending on thickness.

Add veggies back to pan and put in butter and cream . Blend and thicken as neeeded( cornstarch and water mix)

Quick! Smokey! Delicious! Serve with garlic mashed potatoes, green beans, rice 

O’ Clemantine Spiced Tenders

8 chicken tenders 

1/3 cup orange marmalade- warmed

2 clemantines- 1 sliced, 1 juiced

1 tsp paprika

1/2 tsp oregano, onion powder, garlic powder, basil, tarragon

1/8 tsp chipotle chili powder

Grease pan and put in chicken. Spread marmalade ontop then sprinkle with spice seasoning. Top with slices and pour juice over top.

Bake at 400 degrees for about 35 minutes.

Yummy!….. Slightly sweet from the marmalade but then you get a bite of my special seasoning- Zing!!!… Super easy and flavorful. Serve with rice or couscous .

Cantaloupe Salsa

1 cup cantaloupe- diced

3 TBsp Roma tomatoes- diced

1 1/2 TBsp red onion- diced

1 TBdp jalapeño- diced

1 1/2 TBsp cilantro- chopped

1 clove garlic- diced

1 TBsp sunflower coconut oil

1/2 TBsp white vinegar

1/2 TBsp lemon juice

Salt to taste 

Mix and refrigerate for at least 1 hour.

Folks- Mmmmmm good! Simple and tasty . Yea , it’s s bit sweet but not too sweet – add a bit more jalapeño if you would like . Me, I would throw in a bit more vinegar if you like it bitey. Taste like summer and don’t we need a bit of summer now!
