1 cucumber- seeded and chopped
2 ribs of celery- chopped
4 small carrots- chopped
8 mini peppers- chopped
1/2 Vidalia onion- chopped
1 can great northern beans- drained
6 TBsp white vinegar
6 TBsp oil
4 TBdp Dijon mustard
1 TBdp lemon zest
Juice of 1 large lemon
1 TBsp lemon zest
1 tsp dried basil
3/4 tsp dried tarragon
1/4 tsp onion powder
Salt and pepper to taste
Chop and combine all ingredients. Let sit in fridge at least an hour before serving .

1 cup cooked chicken
2 sweet sausages – casing removed
3 mini peppers- sliced
6 cherry tomatoes- halved
1/2 cup cooked brown rice
3 TBsp salsa
1/2 TBsp chipotle powder
5 TBsp water
Squeeze of lime or lemon
2 or 3 6″ tortillas
Sliced fresh avocado
Tortillas warmed in oven ( about 350 degrees)and formed to shell – 10 minutes
Cook sausage and peppers until done . Then add rice , chicken, tomatoes and seasonings…. Cool until warmed then fill shells .
Tasty. Spicy. Easy. Well…. That’s about it!…. Eat!!!!
4 slices deli ham- ribbon cut
4 slices hard salami- ribbon cut
4 slices capicola-ribbon cut
1 slice Russian rye bread
2 TBsp butter
Fry meats until crispy. Melt butter on high heat and crack egg. Cook until desired doness. Toast bread and add more butter
Wholly cow! Salty, creamy, seedy goodness! No the Dr. Would not recommend this but who cares! Indulge once in a while then eat cardboard for 2 days!
1 bag of cheese tortellini

2 slices sourdough bread – toasted
Add 3 TBdp butter, red pepper flakes, garlic powder, onion powder, parm cheese, basil and top toast then cube
Cook pasta until done. Cool under cold water then add dressing and toasts
A nice quick salad for a mid week dinner. Why add the toasts?- I mean there are plenty carbs in the pasta- right!… Who’s counting! You need something to get you over that mid week hump. I made turkey burgers with this salad, minus the bun!- oh, there’s the carb counting comes out.
1 cup water
1/4 cup soy sauce
5 TBsp brown sugar
2 garlic cloves- pressed
1/2 tsp ground ginger
Slurry of cornstatch and water
Heat water, sugar, soy,garlic and ginger over medium heat.
Stir in slurry until thickened.
A simple sauce , savory, not too sweet but zesty…. Serve with brown rice with mango sauce ….
4 boneless pork chops- 1/2″ thick
1 cup buttermilk
1/4 cup hot sauce of choice
Seasoned flour( salt, pepper, garlic powder)
1 eggplant – fry cut- 1/2″ thick
1/2 cup milk
3/4 cup flour with oregano, garlic powder, salt and pepper
Marinade chops in buttermilk and hot sauce for at least 3 hours or overnight in fridge.
Heat oven to 400 degrees. Dredge eggplant in milk then seasoned flour . Put in oven for 15 minutes then flip for another 10 minutes
Meanwhile dredge chops in seasoned flour and pan fry for 2-3 minutes then flip until cooked through.
Quick and flavorful. Just enough bite on the chops- add more hot sauce if you want to but this amount was very flavorful- just right. The eggplant fries are a nice twist- keep an eye on them … They tend to deflate a bit
Rotisserie chicken carcass
3 Roma tomatoes-cut in quarters
6 garlic cloves
1 yellow onion- chunks
2 mini bell peppers- seeded and whole
4 ribs of celery- sliced thick
Add end add 4 tsp BBQ sauce, 1 tsp liquid smoke, 1 1/2 cups cooked brown rice, 1 cup frozen corn. Deprecate meat from bones and add more meat of you like
Add ingredients and cover bones with water. Bring stock to a boil them set on low for 2 hours . Add the rest of the ingredients and top with cheese or hot sauce.
