Tort ‘N Toast Salad


1 bag of cheese tortellini 

8 mini peppers- cut

1 cucumber- seeded and cut

Dressing:

4TBsp oil

3 TBdp white vinegar

3 cloves of garlic- pressed

2TBsp Dijon mustard 

1 tsp basil

1 tsp thyme

Salt and pepper

Toast squares:

2 slices sourdough bread – toasted

Add 3 TBdp butter, red pepper flakes, garlic powder, onion powder, parm cheese, basil and top toast then cube

Cook pasta until done. Cool under cold water then add dressing and toasts

A nice quick salad for a mid week dinner. Why add the toasts?- I mean there are plenty carbs in the pasta- right!… Who’s counting! You need something to get you over that mid week hump. I made turkey burgers with this salad, minus the bun!- oh, there’s the carb counting comes out.
