Cubano Grilled Chops 

 

2 bone in pork chops

Marinade:

1/3 cup orange juice

1/3 cup lemon or lime juice

2Tbs red wine vinegar

1 tsp garlic powder 

1/2 yellow onion- sliced

Mix all and marinade in fridge for at least 1 hour

Rub:

2 1/2 tsp cumin

2 tsp Italian seasoning

2 tsp onion powder

1 1/2 tsp garlic powder

1 tsp coriander 

1 tsp paprika 

Mix all and pat dry chops before grilling 

Grill for about 7 minutes per side -remove from grill when temp hits 160 degrees. Let stand until temp reaches 162-165.

Sooo flavorful. Serve with yellow rice or couscous or atop baby greens . 

Raspberry Balsamic Shrimp and Strawberry , Avocado Salad


18 shrimp

Strawberries- sliced

Avocado- sliced

Sunflower seeds- to taste 

Parmesan cheese- shaved and thin sliced

Romaine lettuce – ribbon cut

Baby spinach- ribbon cut

Marinade:

1/2 Tbsp raspberry balsamic vinegar

1/2 tsp honey

1/8 tsp onion powder

Salt / pepper 

Marinade shrimp in fridge for 1/2 hour 

Dressing: 

1/3 cup oil

3 Tbsp lemon juice 

1/2 Tbsp honey

1/2 tsp raspberry balsamic vinegar

1 tsp dried tarragon

Marinade shrimp then sautée for 2-3 minutes. Last 1 minute add 1 Tbsp dressing then add 1/2 tsp raspberry balsamic vinegar .  

Mix all with salad and top with sunflower seeds .

Well- yummy . That’s all I got !

Marinated Hot Dogs


3 Sabrett hot dogs( or your favorite)

1/2 cup ketchup

1 1/2 Tbsp oil

1 Tbsp worcheshire sauce

1 Tbsp BBQ sauce

1/2 Tbsptamari

1/4 cup white vinegar

1 tsp garlic powder

Mix all and score dogs then refrigerate in marinate for 1/2 hour. Grill until done.

Sooooo flavorful! Easy and quick. Make sure you use a good hot dog for this recipe. Try it- it’s super good. No need for condiments, maybe a few onions. I opted for baby greens- keeping it healthy!

 

  

Jersey Crab Soup


Stock:

20 cups crab shells/legs

3 large whole carrots

2 small whole halved red onions

1 large yellow onion- halved

2 bay leaves

Cover all with water and bring to s boil. Simmer uncovered for 2 hours.

Soup:

1 1/2 -2 cups lump NJ crab meat or more!

6 red skinned NJ potatoes

3 carrots- diced

3 ribs of celery- diced

1 medium yellow onion- diced

20 fresh NJ green beans- pieces

1 1/2 cup cooked NJ corn

2 cans fire roasted diced tomatoes

6 oz. tomato paste

1 Tbsp worcheshire sauce

1 Tbsp old bay seasoning

Bring potatoes, carrots, celery, onions to a boil and cook for 8 minutes then add brand and corn and cook for another 5 minutes. Drain and add to stock. Add the rest of the ingredients and simmer until warmed through.

Wow- you gotta love NJ crabs and produce… We take a bad rap here but we have so much fresh produce and seafood to offer America!… Come to the Jersey shore – you won’t regret it- Jersey Proud!

Jersey Fresh Crab Cakes


Makes 6 cakes 

2 cups lump crab meat

6 mini bell peppers- diced

3 Tbsp red onion- diced

1 egg

1 Tbsp old bay seasoning

1 1/2 Tbsp fresh cilantro- fine chop

1/2 cup Panko bread crumbs 

1/4 cup mayo

Mix all and bake in a 350 degree oven for 20 minutes then flip got another 15 minutes .

Simple, flavorful and fresh. Serve with melted butter . 

Opa-JoePa Salad


3 cucumbers- seeded and diced

2 small red onions- diced

6 mini bell peppers- diced

16 cherry tomatoes- diced

4 TBsp feta crumbles

1/4 cup oil

1/4 cup white wine vinegar

2 TBsp lemon juice

1 1/2 TBsp Dijon mustard

2 TBsp kakamata olives

1 TBsp fresh Greek oregano

1/2 TBsp dried tarragon

Combine all and refrigerate for at least an hour .

OK- the bane of this recipe…. Well first it’s Greek- hence Opa…. But the veggies came from my in laws garden from Penn State- hence JoePa.. We Are ….
