Mexican Lentil Soup

2 cartots- diced

2 celery ribs – diced

1/2 greenbell pepper- diced

5 cloves garlic- smashed

2 cans fire roasted tomatoes

1 can green chilis

1 can black beans- rinsed

2 cups green lentils

64 oz veggie broth 

5 cloves garlic- smashed

4 oz green chilis 

1 TBsp cumin

1 tsp oregano

1/4 tsp smoked paprika

Sautee garlic and onion then add other veggies. Cook until soft then add rest of ingredients .cook on low with lid on for 40 minutes. Then add 2 cups water and cook on medium for 20 minutes . 

Simple. Flavorful. 

Teriyaki & Lime Bean Sliders 

Makes 4 Sliders

1 can black beans – drained and smashed lightly

1/2 cup old fashioned oats 

1/4 cup Panko breadcrumbs

1/4 plus 1/8 cup salsa

1/8 cup teriyaki sauce

1 TBsp fresh cilantro- chopped

1 TBdp fresh lime juice

Pineapple slices

Mix all and form into patties and refrigerate for at least 1/2 hour.

Sautee 4-5 minutes on each side until warmed through. Put pineapple on pan and brown with a tsp of teriyaki sauce. 

Simple. Flavorful. Moist. Please make sure to refrigerate the patties- it helps keep the patties together. Top with avocado ,more teriyaki sauce, diced tomatoes…  

Black Garlic Sauced Pasta 

1/2 lb. pasta of choice ( I used mezze maniche rigate)

2 cups broccoli florets

2 cup vegetable broth

6 TBsp unsalted butter

9 cloves of black garlic- smashed

2 TBsp shallots- diced

Cook pasta accordingly. Steam broccoli for 2 minutes. Drain pasta and add shallots and butter and cook a few minutes then add the garlic then the broth. Add broccoli to pasta. Thicken with a bit of flour, if needed. Top with fresh grated Parmesan cheese. 

Simple, elegant, flavorful- and quick! 

Ok- black garlic. What the hell is that? My wife surprised me with a head of this. After some research, I found out it is actually regular garlic that is fermented under high heat for a month or so. The result? A black as black clove that is so tender- basically paste like. It is super mild and has a sweet , almost balsamic flavor. I used half the head, so look for more recipes using it to come.  Oh the possibilities!!
