Crab Enchilada Casserole

8 oz. lump crabmeat

1 cup corn

4  ounce green chilis 

6 ounce Mexican shredded cheese

1/4 cup black beans 

5 corn soft tortillas 


24 oz tomato sauce( see older post)

1 1/2 TBsp chili powder

1 tsp cumin

1 tsp oregano

1/4 tsp red pepper flakes

1/2 tsp cinnamon

1/2 tsp garlic powder

1 1/2 TBsp oil

Mix sauce ingredients and combine.

Put tortilla at bottom of sprayed pan. Mix crab, chilis, cheese, sauce and fill. Top with another tortilla. Keep going until pan is full. Top with sauce and cheese. Bake at 350 degrees for about 40 minutes. Set for 10 minutes. 

Damn! That’s  yummy!!! Add more crabmeat if you like! 

Family Fun Stir Fry

24 shrimp

1/2 cup carrots- thin slice

1/2 cup broccoli- steamed

1/2 cup Asparagus tips

1/2 cup red bell pepper- thin slice 

1/2 cup portabella mushrooms- thin sliced

2 clementines- peeked and divided


1/2 cup rice wine vinegar

1/2 cup oyster sauce

1/2 cup brown sugar

1/4 cup soy sauce

1 TBsp ginger- minced

3 garlic cloves- minced

6 drops sesame seed oil

Black sesame seeds to taste 

Steam broccoli. Add carrots and peppers until slightly tender. Then add Asparagus and mushrooms. Add shrimp and sauce and cook until just tender . Add clenantines and top with seeds.

Quick and yummy. Add red pepper flakes if you kadd he a bit of heat! 

Veggie Pot Pie

3 potatoes- diced

4 carrots- sliced

2 ribs celery- diced

3/4 cup corn

1 can of peas

1/4 cup onions- diced

2 TBsp butter

1/2 cup flour

1 1/2 cups milk

2 cups broth

1 tsp herbes de provence

1 sheet puff pastry

Heat oven to 400 degrees. Boil veggies until soft. Sautee onions until soft then add butter and flour. Mix well and then add milk and stock gradually until combined and thick. Pour in veggies and combine . Put in pan and top with dough. Make a slit to let out steam . Bake 25 minutes until golden brown. 

Simple. Add whatever veggies you would like- mushrooms, zucchini…

Buffalo Pretzel Chunks

2 1/2 cups sourdough pretzels- pieces

4 TBsp butter- melted

1 TBsp ranch seasoning

Mix all and put on a 250 degree oven and bake for 60 minutes. Cool and eat . Flip every 15 minutes.

Tasty treat. Bring to a get together or just eat on your couch whileyou watch a flick! 

Shrimp and Mango in a Coconut Mango Verde SauceĀ 

Serves 2 

18 shrimp

3/4 cup red bell peppers- sliced

3/4 cup Mango- sliced

1/2 cup Asparagus tips

1/2 tsp sesame oil

1 tsp rice winevinegar

1/2 tsp ground ginger

4 oz black bean soaghettti


1 cup unsweetened coconut milk

1/2 cup salsa verde

3/4 cup Mango

1 serano pepper-seeded 

5 TBsp light brown sugar

1 TBsp lime juice

1/2 tsp cumin

1/4 tsp ground ginger 

Blend all ingredients for sauce  in s food processor.

Sautee peppers and Asparagus until soft. Add rest of spices and combine. Then add Mango and shrimp. Cook and then add sauce .

Flavor central!! Nice blend of flavors. Add more seranos if you like it hot. A nice pleasant mix of spices.
