Pan Seared Barramundi with a Sangria sauce and Cantaloupe Pearls

Serves 2

2 Barramundi fillets

2 cups Sangria wine

2 cups veggie broth

1 TBs orange zest

2 TBs orange juice

12 cantaloupe balls

Heat wine, zest on high until reduced by 3/4. Then add broth and balls. Cook until reduced to 1/2 cup. Add flour until thick , ad you like.

Cook fish / salt and pepper … 3-4 minutes per side. Top with sauce.

Quick. Simple. This fish is awesome- flaky, white, buttery…. try this fish. Look for Australian origin. Clean and flavorful fish.

Bean & Potato Soup

Makes a potful( easily serves 8 people)

5 redskin potatoes- diced

1 can small white beans- undrained

1 can pink beans- undrained

3 carrots- sliced

1/4 cup celery- sliced

1/3 cup shallots- diced

1/3 cup frozen kale- chopped

6 cups veggie stock

6 TBs tomato paste

3 garlic cloves- minced

1 1/2 tsp dried thyme

2 pinches of red pepper flakes

Sauté shallots until soft. Add celery and garlic and cook for 5 minutes.

Meanwhile cook potatoes and carrots in boiling water for about 10 minutes. Drain.

Add ingredients together and simmer for 30 minutes.

Nice. Simple. Almost is like a Stew! That liquid from the beans really helps thicken up the soup.

Jersey Shore Seasoning

3 bay leaves

2 TBs celery seed

1 tsp mustard seed

1 tsp black pepper

1/2 tsp ground nutmeg

1/2 tsp ground ginger

1/4 tsp red pepper flakes

4 cloves

1/8 tsp allspice

1/8 tsp smoked paprika

1 tsp sweet paprika

2 tsp salt

2 tsp Valencia orange peel

Put all in a processor and pulse til blended.

Use for fish, veggies, poultry… like that Maryland style but with a bit of citrus… try it and let me know…. tweeking is in progress.

Jacked Veggies and Cavatelli

Serves who knows?

So remember those roasted veggies and that left over cavatelli? Sautée them up and a dollup of roasted red pepper hummus..maybe a touch of water to make a cream sauce. Simple and oooooohhhh so good

Cavatelli and Broccoli in a roasted garlic and ricotta cream sauce

Serves 3-4 people

13 oz. cavatelli

1 cup ricotta cheese

3 cups broccoli

8-12 cloves garlic

2 TBs butter

Pinch of red pepper flakes

In foil , add garlic, drizzle of oil and salt and pepper. Close up and put in a 375 degree oven for 45 minutes. Steam broccoli and cook pasta . Smash garlic up.

Reserve 1 cup of pasta water.

Add pasta, cheese, butter,flakes, garlic and broccoli and stir. Add a little of the pasta water until you like the consistency of the sauce.

That’s some good eats! I mash up the broccoli pretty good- almost like a diced broccoli. Add more flakes for heat .
