Marinated Vegan Tofu

14 oz. firm tofu- pressed and cubed

1/4 cup plus 2 TBs lemon juice

1/4 cup apple cider vinegar

1/2 cup olive oil

2 TBs dried oregano

1 TBs salt

7 sun dried tomatoes- chopped

Mix all and set in fridge. Wait at least 2-3 days. Mix daily.

I gotta tell you Folks- this is super tasty. Very simple and versatile. I would recommend to set out of fridge for 30 minutes before use to let the oil return to liquid state. Eat as is with crackers of toss in salads.

White Peach Dijon Vinaigrette

Serves 1 hungry Zig

2 TBs oil( olive or avocado)

2 TBs white peach balsamic vinegar

1/2 TBs orange juice

1/2 tsp Dijon mustard

Salt and pepper to taste

Sweet, savory, just plain tasty .

Top your salad, grilled fish with this!
