Pumpkin Spiced Oatmeal Cookies

Makes 2 dozen plus

1 cup Butter, Softened

3/4 cup Granulated Sugar

1 cup Brown Sugar

2 Eggs

1 tablespoon Pure Vanilla Extract

1 teaspoon Molasses

1 teaspoon Cinnamon

2 cups All-Purpose Flour

1 teaspoon Baking Soda

1/2 teaspoon Salt

3 cups Old Fashioned Rolled Oats

2 tablespoons Pumpkin spice

1 Preheat oven to 350°F, line a baking sheet with parchment paper.

2 In the bowl of a stand mixer, fitted with the paddle attachment, cream together the butter and sugars on medium speed for 3-4 minutes.

3 Scrape down the bowl, and mix in the eggs one at a time. Stir in the vanilla and molasses.

4 In a separate bowl, whisk together the flour, cinnamon, baking soda, and salt. Add the dry ingredients into the wet ingredients, and mix until just combined.

5 Scrape down the bowl again with a rubber spatula, and slowly mix in the rolled oats and pumpkin pie spice.

6 Scoop out dough with a large cookie scoop and place on the parchment lined baking sheets about 2 inches apart.

7 Bake for 10-12 minutes, until the edges are golden brown, its okay if the middles look slightly undercooked, they will finish cooking on the pan as they cool.

8 Allow to set for4-5 minutes before transferring to board.

MexiCali Soup

Serves a bunch of hungry people

1 cup cooked rice

2 carrots- diced

1 celery rib- diced

1/3 cup bell paper- diced

1/4 cup yellow onion- diced

2 cloves garlic- diced

1 can black beans- drained and rinsed

1 can kidney beans- drained and rinsed

28 oz crushed tomatoes

2 1/2 tsp cumin

1/4 tsp smoked paprika

1/2 tsp coriander

1/3 cup fresh cilantro- chopped

1/3 cup corn

5 cups veggie stock

1/2 Serrano pepper- seeded and diced

Sautéed vegetables until soft. Add garlic and Serrano pepper. Add stock, corn and spices. Bring to a boil then set on low for 30 minutes. Add rice and simmer until warmed.

It tastes like you jumped the border. I need a Corona!

Buffalo Cauliflower

1/2 head cauliflower- cut into small florets

3/4 cup coconut milk or milk of choice

3/4 cup water or more

1 cup flour

1 tsp garlic powder

1 tsp onion powder

Dash of smoked paprika

1 cup Franks red hot

1 TBs vegan butter

Dredge cauliflower in mix and drain well. Put in a 450 degree oven for 20 minutes. flip halfway. Remove from oven and toss with hot sauce and butter.Put back on oven for 10-15 minutes or until crispy.
