White Bean Chili

4 cans cannelinni beans- drained and rinsed

1 yellow onion- diced

1 small zucchini- diced

1/2 cup corn

4 garlic cloves- minced

28 oz veggie stock

4 oz can of green chili

1 TBs chili powder

2 tsp cumin

1 tsp Italian Seasoning

1/4 tsp cayenne pepper

Sautéed onion, peppers, garlic until soft. Add rest of ingredients and bring to a boil. Simmer for 30 minutes then remove 2 cups and purée and put back into pot- this will thicken the chili. Add hot sauce, cheese or just salt.
