Split Pea Soup (Vegan)

Makes a bucket full

8 cups veggie broth

16 oz split peas

1 1/2 cups diced potatoes

1 medium onion- diced

2 medium carrots- diced

3 garlic cloves- smash and chop

1/2 tsp Italian seasoning

4 tsp liquid smoke

1 bay leaf

Sautéed onions, garlic, seasoning on medium low for 15 minutes. Stir frequently. Then add leaf, carrots, potatoes, peas, broth, liquid smoke. Bring to a boil then simmer uncovered for an hour or until peas are tender. Remove 3 cups of soup and blend well then add back to pot and stir.
