Fruit Smoothie Bowl

1 1/2 cup frozen strawberries

1/2 cup fresh spinach

1 banana(frozen)

1/2 cup green tea

1 TBs lemon juice

1/2 TBs maple syrup

Pinch of turmeric

Pulse all and top with choice ingredients – coconut, sprouted seeds, strawberries, apples, grapes, granola, chia seeds…

Seeded ‘N Sauced Cranberry Granola

2 1/2 cups oats

2/3 cup sprouted seeds- pumpkin and sunflower mix

1 cup unsweetened apple sauce

1/4 cup vegan butter

1/4 cup dried cranberries

1 tsp pure vanilla extract

1 tsp cinnamon

Pinch of salt

Mix all and put in a 350 degree oven on parchment paper. Bake for about 40 minutes. Check- Often!

Lasts 2 weeks in an airtight container

White Bean & Fire Roasted Pepper Soup

Makes a pot full!

2 can small white beans- drained and rinsed

3 small carrots- diced

2 celery ribs- diced

1 small onion- diced

3 cloves garlic- minced

1/2 cup fire roasted red peppers- diced

8 cups veggie stock

2 TBsp tomato paste

1 bay leaf

1 tsp rosemary

1 tsp oregano

Sautée onion, carrots, celery until tender. Then add rest of the ingredients. Bring to a boil and simmer for 20 minutes.

Add salt and pepper. If you eat cheese, shred done ontop.

Raw Vegan Tacos

Makes about 12

Walnut meat:

1 cup raw walnuts

5-6 sun dried tomatoes

1 tsp lime juice

1 TBsp chili powder

1/2 tsp cumin

Pinch of cayenne pepper

1/4 tsp onion powder

Blend all until small clumps form. You may need to add a dash of water.

Pico de Gallo:

Diced tomatoes, diced red onion, chopped cilantro, lime juice and salt. Use what amounts you like.

Assemble how you like. I added avocado, carrots, red cabbage and radishes.

Chili Verde with Pickled Serrano’s

Serves a bunch

2 cans Roman beans- drained and rinsed

1 can cannellini beans- undrained

2 cups veggie stock

1 1/4 cup roasted chili verde salsa

1 medium onion-diced

3 garlic cloves- smashed

1 small zucchini- diced

1 1/2 cups corn- frozen

1/4 tsp oregano- dried

1/4 tsp cumin

Pickled Serrano’s:

1 pepper(diced), pinch of salt, 1/2 lime(juiced)

Sautéed onion until soft. Add zucchini and garlic. Cook until soft. Add everything else. Simmer for about 45 minutes.
