Jambalaya

1/3 cup red onion- dice

1/3 cup celery-diced

2 garlic cloves- minced

1/3 green pepper- dice

1/3 green red pepper- dice

1 can fire roasted tomatoes

1/2 tsp of oregano, basil, thyme, paprika

1/4 tsp red pepper flakes

1 TBsp soy sauce

1/4 tsp black pepper

1 can beans

1 cup cooked rice

Sautée veggies in a tsp oil until tender then add garlic, spices, beans. Then rice.

Jersey Summer Corn & Tomato Soup

Serves 6

4 eats of corn- cooked

1/3 cup red onions- diced

1 carrot- diced

1/4 red bell pepper- diced

1 TBsp jalapeño- diced

16 oz tomatoes- broiled with 1/2 tsp liquid smoke

4 3/4 cup veggie stock

1/2 tsp cumin

1/4 tsp smoked paprika

1 1/2 TBsp lime juice

1 TBsp hot sauce

Sautée veggies until tender in a tsp oil. Add everything else. Bring to s boil then simmer for 30-40 minutes. Remove about 1 cup and pulse until smooth then return to soup.
