White Bean & Tomato Bisque

Makes 4 +cups

2 cups veggie stock

1/2 cup celery- diced

1/2 cup Vidalia onion – diced

4 cloves of garlic- smashed

1 can small white beans- drained and rinsed

1 can Italian style diced tomatoes

1/8 cup tomato paste

1 tsp sugar

1/4 tsp smoked paprika

1/4 tsp cumin

Sautéed celery, onion, garlic until tender. Then add beans, tomatoes, spices, stock, paste. Stir and bring to a boil. Then reduce to a simmer. Simmer for 30 minutes. Blend everything until smooth. Serve with croutons on fresh basil
