Herb Marinated Chops & Chicken


Serves 2

1 chicken breast- cut in thirds

2 boneless pork chops

10 fresh basil leaves

4 sprigs fresh Greek oregano

5 sprigs fresh tarragon

6 fresh sage leaves

6 cloves of garlic

1/3 cup oil

Pinch of red pepper flakes

Remove herbs from stems and chop all finely- add oil and pour over meats and refrigerate for at least 2 hours.

Grill until done- about 3-4 minutes per side.

Taste like the garden! Fresh, a bit of spice( add more pepper flakes) Serve with some corn on the cob or a salad and you have got a super quick, tasty, herby meal!

Coq au Vin – Chez Zig style


1 rotisserie chicken -quartered

12 mushrooms- quartered

3 carrots- 1″ pieces

3 ribs of celery-1″ pieces

1 Vidalia onion- large chunks

3/4 cup red wine

1 1/2 cups chicken stock

3 TBsp tomato paste

3 TBsp butter

2 TBsp dried thyme

1 bay leaf

Cook carrots, celery, onions on medium heat for about 14 minutes. Let it get semicarmelized.

Add mushrooms, broth, wine, tomato paste, bay leaf, thyme and cook covered until veggies are tender- about 10 minutes.

Add butter and whisk in and then nestle in your chicken. Cook covered until chicken is warm.

Super quick- about 30 minutes!!!  It creates a hearty, rich and velvety sauce!

So this is not traditional- I know. My Grandmother from France is rolling in her grave! But the flavors are there like in the original. I did not add bacon. You really don’t need it but add it if you like. I used a sweet onion not pearls because that’s what I had – actually it was really tasty- it mellowed out the Cabernet….

A simple and elegant meal you can make any weeknight- don’t forget the baguette for that yummy sauce!!

Grilled Chicken with Firehouse BBQ Sauce

3 chicken breasts – scallopini cut

1 cup ketchup

1/2 cup Franks red hot sauce

2 TBsp lime juice

2 TBsp honey

2 TBsp soy sauce

1 TBsp red wine vinegar

1 tsp onion powder

1 tsp garlic powder

1/16 tsp smoked paprika

Marinate chicken for at least 2 hours- reserve 3/4 cup for basting

Grill unt desired doness- baste period ally

Not too spicy, but just enough. A hardy BBQ sauce- try it on ribs and hell,baste that burger with this sauce!  Perfect for that upcoming Father’s Day BBQ!!!!

3 chicken breasts-cut in quarters

4 red skin potatoes-small chunks

6 carrots- 1″ pieces

2 celery ribs-1/2″ pieces

Orange bell pepper-1″ pieces

1 Visalia onion-1″ chunks

6 cloves of garlic- smashed

1/4 cup dry ranch dressing

4 sprigs of fresh thyme

1 cup water or stock

Brown chicken for 1-2 minutes per side

Grease pan and add potatoes

Top with chicken

Put in veggies and brown for 3 minutes then add 1/3 cup water and simmer for 5 minutes

Pour over chicken and then sprinkle with ranch dressing and add 2/3 cup water

Bake at 400 degrees for 45 minutes

Simple, elegant, full of roasted goodness!

Mardi Gras BBQ Shrimp & Chicken

  

1 lb shrimp (uncooked)

6 chicken tenders(cut in 2″pieces)

1 tbsp butter (soft) and 2 tbsp butter (chilled)

3 cloves garlic(chopped)

1/4 cup Franks red hot sauce

1/2 cup chicken broth

1/3 cup worcheshire sauce

3 tbsp lemon juice

3 tbsp Zigs creole seasoning(see my earlier post)

Melt the softened butter and add garlic, worcheshire,broth,hot sauce,lemon juice and seasoning

Bring to a boil and reduce by half- about 10 minutes

Add chicken to a pan and cook for 5 minutes then add shrimp

Cook until done then reduce heAt and add the rest of the butter

Serve over rice or noodles

You may want to double the sauce- I did and it was enough to coat the starch of your choice….. Don’t forget a nice crusty bread. We had our son and his best gal over and they brought a super nice boulle- slopped up all that goodness

Once again- jack up the spice to your liking- add more of my creole seasoning…. It is soooooo good!

Buff Bites

3 chicken breasts( 1″ pieces)

2 eggs(beaten)

1 1/2 cups Panko bread crumbs

1 tsp Italian seasoning

Black sesame seeds for topping

Honey and garlic sauce:

1/4 cup honey(organic Colorado honey)

1/4 cup soy sauce

3 cloves garlic(minced)

1/1 tsp Sriracha

1/2 tsp onion powder

Heat oven to 375 degrees

Beat eggs and add Italian seasoning and salt and pepper

Dredge chicken in egg mixture then bread crumbs

Put in cookie sheet and bake for 20 minutes

Put sauce ingredients in a pan and heat until boiling.  Reduce to lie and simmer to reduce to half

Pour over chicken

So this is not buffalo style chicken- as you can see from the ingredients . My daughter was accepted to the university of Colorado Boulder and they are called the Buffs.    Their colors are gold and black….. Get it????? Golden color and black sesame seeds????

 

 

Teriyaki Rice Bowl

3 chicken breasts(sliced)

2 carrots(thin sliced)

6 mushrooms(thin sliced)

2  cups cooked rice

Teriyaki sauce:

1/3 cup brown sugar

1/3 cup soy sauce

1/4 tsp ground ginger

1 tsp agave nectar

2 tsp sesame seed oil

Steam veggies-about 20 minutes in microwave

Mix sauce ingredients with chicken and put in pan til done and carmelized- about 10 minutes

Layer ingredients to your liking add soy sauce or lemon juice to top

Chicken & Potato Casserole

3 chicken breasts(cubed)

11 portabello mushrooms(sliced thin)

3 potatoes(sliced thin)

1 medium onoin(sliced thin)

1 tbsp garlic powder

1 tbsp flour

1 1/2 cups chicken broth

1 cup light cream

1 cup frozen spinach(thawed and drained)

1/4 cup Parmesan cheese

Cut veggies and chicken and put in pan. Mix all other ingredients together except Parm. Cheese 

Finally top with cheese

Bake for 1 hour at 425 degrees 

Chipotle Avocado Smash Grilled Chicken Sandwich

Tequila & Lime marinade (see my other post)

1 avocado- 1/2 sliced the other half smashed

1 multigrain roll

3 slices of red onion

1/2 Roma tomato(sliced)

3 leaves red butter lettuce

sprigs of cilantro (fresh)

Marinate chicken in fridge overnight.  grill on high for 3 minutes until done( I scallopine cut my chicken for a faster grill)

Grill roll slightly

Combine smashed avocado with 1/4 tsp Zig’s chipotle seasoning.  Spread on  top and bottom of roll.

Add chicken then lettuce then tomato and onion.  Top with a few sprigs of cilantro and a squeeze of lime.

Honey & Sriracha Chicken

2 chicken breasts – diced
1/3 cup cornstarch
1 cup water
4 TBsp soy sauce
1/2 TBsp Sriracha sauce
3 cloves garlic- diced
5/8 cups sugar
1/4 tsp ground Ginger
3 TBsp Honey
2 Carrots- diced

Steam carrots for 7 minutes
Add chicken to wok and cook til done
Remove from wok.
Add water,sriracha,soy sauce,garlic,sugar and honey
Bring to a boil and whisk in 2 TBsp cornstarch and 2 TBsp water until thick
Add chicken and carrots to sauce

Super easy dish folks . I added diced pineapple ontop and a squeeze of fresh lime. Serve over rice
