Serves 4 plus
1 can lentils with juice
1/3 cup yellow onion-diced
1/2 cup carrots – diced
1/3 cup celery- diced
1/3 cup zucchini-diced
3 garlic cloves- minced
2 bay leaves
1 1/2 tsp dried thyme
1/2 tsp dried marjoram
1/2 tsp paprika
1 tsp sherry
1/2 tsp red wine vinegar
1 cup veggie stock
1 cup crushed tomatoes
Salt to taste
Sautée onion and garlic then add veggies until slightly soft. Add rest and bring to a boil. Then cover and simmer for 45 minutes. Remove bay leaves before serving.
