Orzo Salad with Artichokes & Herbs


1 lb orzo

3/4 cup red onion- diced

3 garlic cloves- minced

12 cherry tomatoes- halved

1 cup diced marinated artichoke hearts

3 TBsp capers

1/2 cup fresh parsley- torn

1/2cup fresh basil- torn

1/3 cup oil

1/3 cup vinegar

3 TBsp lemon juice

1-2 TBsp Dijon mustRd

Salt and pepper to taste

Cook orzo as per box – cool then add all ingredients. Let rest in fridge overnight or at least 2 hours.

Simple, less filling than ordinary pasta salad
